Is that quite sweet Strolls? Passito is an odd wine making process. Ordered in from Birtellis pizza tonight, excellent sourdough pizza with local toppings and no bollocks like chicken on a pizza, for ****s sake. Slipped a bit on the booze rules, couple of glasses of Pinot Grigio to accompany. And a magnum mini for pudding. Zero effort meal but tasty. I’ll cook something tomorrow.
I’ve just looked it up. If it’s half as good as an Amarone at the Naked Wines price it’s the bargain of the century. And unsurprisingly out of stock. That wine making process (essentially sun drying grapes to intensify the flavour) makes some great dessert wines like vin santo (though I usually opt for a port at that stage of a feast). I had never realised that Amarone is made the same way, and it is a truly delicious chunky red.
Naked Wines are really good and this one's just about my favourite of theirs (I never pay more than a tenner).
An old fashioned mincemeat recipe cooked with onion, tomato, carrot, beef stock and tomato puree served with creamy mash and Farrows Giant Marrowfat Peas. Not much room for the chocolate fudge cake...

On my foraging trip today bought a bottle of Valpolicella Ripasso, described as a ‘baby amarone’ (and considerably less damaging to the wallet) and similar to your Passito, just a couple of quid pricier. will be consumed with the rack of lamb on Sunday. Tonight is pasta night.

Well Sb, I have been using your recommended “The Roasting Tin” and can highly recommend. So far have managed to do: ... the Chicken, chorizo, chickpeas and tomatoes” along with a few extras (bit of chili for heat, extra herbs and some additional sun-dried tomatoes). Excellent I must say; ... goats cheese, red pepper, mushroom & pesto fusilli again with a few extras. Once again, thoroughly enjoyable. ... steam roasted almonds & broccoli with lime, ginger, garlic & chili. Mrs SW overdid the lime which wiped out the salmon, but will be doing this again. ... tonight is a veggie roast with peppers, courgette, tomatoes, feta, pine nuts and herbs. Again added chili’s, garlic and splash of balsamic. Looking great. Great recommendation Sb ... it’s been a revelation and revolution! Keen to try the roasted avacado and chicken as well as the five spice duck.
Brilliant mate, it was equally a ‘**** me it can be this easy and this tasty’ revelation for us when we got it! We are going for the beetroot risotto tomorrow, and the chipotle chicken again sometime next week. Really glad that the word is spreading!

Friday nights are home made pizza nights. Tonight, we have a tomato base with parley, herbs and freshly crushed garlic. The pizza toppings are fresh smoked ham and hot hungarian salami with mozzarella cheese. Slightly curried Bolognese mince is then applied in generous amounts. The pizza is lightly sprinkled with garlic pepper with a splash of garlic tomato sauce ( from the base ). Cooked in the pizza oven for 10 minutes. Washed down with a small gin & tonic. Footnote - No bugger will come near me for at 48 hours there after. Can't say l'm not doing my bit of social distancing!
Daughter is making raspberry, hazelnut and chocolate flapjacks from the roasting tin book, our first go at a sweet thing from the bible. And man is it sweet, a ton of sugar and golden syrup is in there. Diabetic coma awaits.
Roasting Tin part two today, beetroot risotto, which to be honest I needed to be talked into. But yet again delicious and straightforward, the cooking method a first for us for risotto was brilliant. Could just add another flavour, possibly lemon, and definitely a handful of parmigiano to finish it off.
A whole piri-piri chicken, with charlotte potatoes and side salad. Washed down with homebrew, whilst the missus is on black cherry gin and fever tree tonic. Did the shop today, and have bought a bucketful of ingredients for Roasting Tin dishes - can't wait! Good call Stan
