Have you tried putting some large lumps of mozzarella in it MK? It comes out all lovely and stringy when baked. Marvelous.
After a week of good old solid comfort food, I resorted to Macaroni Cheese tonight. I forgot to get the diced beef out of the freezer to do an all-day slow-cooked beef bourguignon. It's going to happen tonight though.
Last night we had chilli prawns with a touch of cream and tagliatelle washed down with a Picpaul de Pinet from the Languedoc region of France...….The prawns were from Lidl and can be cooked from Frozen, Mrs TR stocked up with 3 or 4 packets before Christmas, they're bloody delicious...….
You can’t go wrong with any wine from Languedoc. The remainder of the vat of bolognese sauce from earlier in the week is about to have kidney beans, chilli, chipotle concentrate added to it to brew up for tonight’s feast.

Tonight we had vegan burgers with sweet potato fries. Followed by homemade banana and chocolate cake with ice cream.
We’ve only started eating sweet potato regularly in the last few months. It’s great, tasty in itself but takes the flavour of any spices or herbs you chuck on it brilliantly. Was it vegan ice cream and chocolate?
Yep. I'm the only non vegan, but I took the decision a while ago to cut my meat intake, plus it's easier to eat the same as everyone else. I still eat some meat occasionally and cow's milk and cheese etc. Mrs Rangercol made the banana cake with all vegan ingredients, including the chocolate and the ice cream was also vegan.
It's very versatile as you say. Tomorrow we're using it as the topping on a 'healthy Shepherd's Pie' with turkey mince and a coating of smoked paprika...
