This week's Sunday lunch - Spanish merguez sausage beanpots. Spicy sausages, kidney beans, sweet red peppers and onion cooked in tomatoes, Worcestershire sauce and dijon mustard. Topped with flat-leaf parsley and served with tortilla chips. (And a nice, ice-cold bottle of Estrella Damm)
Sunday brunch. Tunisian ShakShuka. Plum and salad tomatoes, roasted red and green peppers, garlic and onion cooked in oil with smoked paprika, cumin, coriander, mild chilli powder and cayenne pepper. Topped with eggs cooked in the tomato sauce and garnished with black pepper and flat-leaf parsley. Served in the pan alongside grilled pittas and an ice cold beer. The African spices work so well with the tomatoes and eggs......don't tell me vegetarian dishes are boring!! (Wife is away so had it all to myself as I'm a fat barsteward!)
I shall be eating Pigs head and cabbage with a cheeky pint of Guinness. Followed by a helping of bread and butter pudding. It
Sundays special - Roasted winter sprout curry and ham. Brussels sprouts roasted in turmeric, coriander and cumin and caraway seeds then cooked down in vegetable broth with onion, garlic, green chillies, toasted almonds, dessicated coconut and fresh coriander. Served with turmeric coated fried paneer cheese and heaps of sliced left-over roast ham. Warming and comforting flavours just for autumn!
Is that the entree, the mains and or the desert… or all in one? Just asking for a friend. Footnote - l have only just seen the dates. Chuck Faulkner with the Late News!
Sundays dinner - Minted baby potatoes topped with trout fillets crusted with grissini breadstick crumbs, breadcrumbs, coriander and green olives. Served with broad beans in a Greek yogurt, lemon juice, lemon zest and chopped mint sauce and some lemon wedges on the side. Oh, and a nice cold Pinot Grigio!! First time prepping a whole fish, quite pleased with myself! ( Must be doing something right as my wife really enjoyed it....even though she's not a fish fan and doesn't like olives! )
Yes, i thought that too on first reading the recipe. It all comes together really well though. A pretty creamy, mild dish with just the hint of olive and coriander coming out through the fish and lemon juice. Jesus, hark at me! Jamie Oliver eat yer heart out
A lovely, light, healthy lunch before Qpr take on the canaries. (Ridiculously tasty). Grilled goats cheese topped with pink peppercorns on fresh toasted baguette slices served upon a salad of rocket, parsley and tarragon in olive oil with pickled red onion and honey-caramelised pecans. Drizzled with warm, runny honey and served with a small, cold prosecco.
My wife cooked xmas dinner so New Years Day was my turn! Topside of beef roasted on a bed of celery, white onion, garlic and carrots (which was then pulped and cooked with beef stock, flour and red wine to make a rich gravy). Potato Al Forno. Sliced potato, fennel and onion baked in a sauce of milk, double cream, anchovy fillets, garlic, rosemary, bay, fresh nutmeg and parmesan. Topped with more grated parmesan and fennel fronds. Carrots and Parsnips cooked in a cartouche with salt, pepper, cumin, thyme, butter and wine. All served with the meaty gravy and steamed green beans. And a nice glass of rose'. I think i overdid it with the Al Forno though.....it was meant to serve 8!
Gonna have to try the Al Forno. Do enjoy a Dauphinois, like the twist with fennel. Ideal before a ballet, modern dance or even Shakespeare play
