Try again this afternoon, got plenty of wood and it's not windy, think I've got it right this time. Doing a chipotle chicken thigh dish, lamb koftes, burgers and hot dogs with mini bratwurst. Have to get some beers in.
Been doing a bit of reading up on cooking or smoking with wood and they reckon you only get about an hour before the wood loses its heat!
Sounds about right, he’s maybe waiting too long to cook on it, thinking it needs to be left as long as charcoal.
Yes too long deffo. I've got loads of wood to keep adding this time, cherry and Apple wood. Base of silver birch.
So it worked yesterday, vents half open more wood, got a good burn going and did the quick thints like hot dogs for the kids. Then it was lid on and pork and chicken cooked for an hour and a half. Really nice does make a difference. I think I need to change it up though so that I use charcoal for the high heat before adding wood and doing the slow cook. I'm getting there slowly.

Barbecue tonight. Got some Beavertown IPA's, some Moretti cans, a bottle of dry London with some Fever Tree ginger beer and some Schweppes tonic. Few Sauvignon Blanc (lots of ice available) and a box of quality reds. That Italian from last night was ****ing mint. Oh, and some meat.
FWIW; butcher burgers and sausages, lamb koftas, chicken tikka legs and thighs, cajun chicken breasts. Brioche buns, hot dog rolls, pesto pasta salad, mixed salad and cous cous salad.
