I don’t like coriander. I also put fresh chilli in. Prefer garlic powder in a chilli than actual garlic as I make the spice mix first. Soften the onions, then cook out the purée add spice mix then add the mince cook it out then chuck in pasata, chopped tomatoes, kidney beans, Worcester sauce and liquid smoke and diced pepper and fresh chilli. Then bring to boil and simmer for as long as you can be arsed. Longer the better.

It’s nice. Depends how you like a chilli. I like a smokey flavour. Use it like Worcester sauce has the same consistency. I’ve put a splash of it on a steak too. It’s worth having in your cupboard.
To be honest the only out of the box ingredient is tamarind paste and that wouldn’t be to my taste. Not even in haste. It would be a waste.
Lad goes spearfishing off the coast here for Cod, Pollack, Bass, Mullet etc. What he doesn't catch he gets fresh from the market at Newlyn. Top quality stuff and has got his own smoke house a few miles down the road to me
I’ve used it making chicken fajitas too. Also used it a lot the other summer in marinades for things on the bbq.
Actually mate I used to make it with tamarind inside but after reading my customer cards I dropped it. I prefer it with tamarind.
