I've been practising cooking chips in Beef Dripping on the stove. Not easy to get the authentic chippy taste - they need a a relatively gentle bubbling and "boiling" for 10-15 minutes, ie without the fat being too hot and so the chips stay fairly anaemic. Then remove the chips, leave to stand for about 10 minutes. And then very slightly increase the fat heat for a few minutes before 'flash-frying' the chips a second time for about 30 seconds. This should give them a crispy darkened edge whilst leaving them fluffy inside. Be warned, anything more than a slight heat increase for the second frying tends to cremate them to inedible levels. Need to get the hang of battering and frying the fish next.
Was that Chippy down Walliker Molly Malone's? When I lived down Arthur St in 1990, Molly Malones was at the other end, round the corner on Plane Street (or George St, I always get the two mixed up). The chipshop on Walliker was inferior at the time.
Depending on when you want your fish and chips, Wackers Scarborough is pretty good, Inghams Filey very good, High St Fisheries Flamborough pretty decent, Sewerby not bad, 149 Brid excellent, Hornsea Whiteheads not so great nowadays,
Oh, and I used to go to Smithys on Bev Road in the mid 80s. It was rubbish, but it was open late and did cheese patties, which were nice. In other news, I've never been impressed with Whiteheads. They had huge portions but the chips were always anaemic and too big. Fish was okay but the batter was bland. Went the other week and they were better than they used to be, but its got quite pricey. Going to try Sullivans over easter as they used to be nicer but they had smaller portions and were more expensive. I hear the friers are all kids there now, but will give them a chance.

That's the thing about cornbeef, cold I think it tastes like cardboard but as soon as you heat it, be it in a patty or even cornbeef ash, ****ing lovely !!!
Stanton's Cafe on the old Brekkes corner. Was demolished to make way for Hulls new fish market back in 2001. Pete Stanton moved his business into the cafe at the new market but slowly lost most of his trade. He retired when the market finally closed in 2011 and took his secret batter recipe with him.
Agreed on the praise for Harry Jacksons. Used to be our regular chippy when I was a lad. Seem to remember it having a jar of pickled eggs on the counter that seemed huge at the time. Also have fond memories of Crimlis's on Holderness Rerd. Sort of fish n chips that would leave a layer grease on the roof of your mouth.
Do you happen to know if they cook in anything else but beef dripping? In fact, if anyone knows of a chippy that cooks in vegetable or nut oil, I'd appreciate it! Chazz, a really nice fellow was Harry Jackson. I produced his son's band and for weeks he wouldn't let me pay for F&C - haddock the size of a whale. A real attack on the North Sea that place!
No, but I've tried several of his signature stuff from Waitrose (for example his cherry bake well vodka) Consistently absolute crap
Drove an hour from Gold Coast to Brisbane last week to get traditional haddock and chips from a British chippy. They had a British shop next door as well. me and the Mrs spent $130 dollars but it was well worth it. Not quite the taste of home but the closest I've ever been to it in Australia.
