This is the ingredients I’m using...will post up pics showing the different stages Cumin seeds Coriander seeds Ground Coriander Ground Cumin Dry Fenugreek leaves(Methi) Chilli powder Garam masala Salt Gram flour I’m using 3 medium onions 4 potatoes Batch of Fresh spinach Cut them all nice and thin, not chunky...thin and long cuts work best for the crispiness

I don't tend to use much herbs and spices in cooking, the best you will get out of me is; Garlic Salt Aromat Basil Italian seasoning, which contains oregano, red pepper flakes, marjoram, thyme, rosemary, sage, parsley Obviously I use stuff like onions and peppers That's about it really

Mix in all the ingredients apart from the Gram flour Use whatever amount you want...we all have our own levels crush the coriander seeds between your hands so they are coarse Now add the gram flour...not lots...but a bit at a time. You’ll need to add water too to make it runny, we don’t want thick and stodgy. The consistency should look like below, not watery but creamy consistency Looks thin, just want it to coat the Baji...not thick batter like you get in the supermarkets.
The wife's open enchiladas. I added the guacamole, salsa and some other dip ****. I think the lettuce garnish sets it off lovely. Delicious.
