That's oil you can see, the sauce is very thick. Madras is my limit, got a sweat on.

nice touch adding a glass of cold water to the curry to help with how spicy it is before serving.

Fish and prawn gule with green beans. Sort of curry soup with roti jala (literally net bread - like a very thin pancake) that you use to soak up the liquid. Fish looks like it was caught 3 weeks ago but has just soaked up liquid. Simple dish which has all the aesthetic qualities of Ginge Special but amazing flavour.

 

Oh and it was cooked by the maid not me! I can’t lose here.

I think Ginge could do with a maid, like yours, to help with the cooking
